Wal-Mart Deceived Buyers of Organic Eggs, U.S. Lawsuit Says

Wal-Mart Stores Inc. and their egg supplier are currently facing a federal lawsuit for misleading consumers by selling organic eggs with packaging that claimed the birds had access to the outdoors. The lawsuit alleges that Cal-Maine Foods Inc., the megastores’ supplier and also the largest egg producer in the country, defined outdoor access as an enclosed structure with screens allowing outdoor air. Wal-Mart has not reviewed the allegations, but according to spokesman Randy Hargrove, “We hold our suppliers to high standards and are committed to providing our customers the quality products they expect.”

Animal Welfare Standards and Consumer Demands

It’s difficult to determine if this lawsuit will go anywhere, especially in light of the USDA’s recent rejection of more humane animal welfare standards. The Organic Livestock and Poultry Practices, intended to allow natural behaviors and reduce stress, was permanently shuttered half a year before it could go into effect. Where is the consumer in all of this? Demands for verifiably organic, humane, and high-quality products are skyrocketing, making organic foods the largest growing food market. The lawsuit says “Consumers paying more for these eggs have been deceived…The theoretical ability to view the outdoors is not the same as having access to it.”

USDA Walks Back Healthy School Lunch Policies

The United States Department of Agriculture has rolled back several healthy school lunch requirements. These changes include allowing schools to serve flavored milk, opt out of whole grain requirements, and more slowly reduce the sodium in their offerings. In the USDA’s press release, Sonny Perdue, Secretary of Agriculture, cited their reasons for the changes, “Based on the feedback we’ve gotten from students, schools, and food service professionals in local schools across America, it’s clear that many still face challenges incorporating some of the meal pattern requirements. Schools want to offer food that students actually want to eat. It doesn’t do any good to serve nutritious meals if they wind up in the trash can. These flexibilities give schools the local control they need to provide nutritious meals that school children find appetizing.”

Many of the issues cited by the USDA as problematic for school lunch providers are not actually a problem. A statement released by Center for Science in the Public Interest Vice President for Nutrition Margo G. Wootan:

Virtually 100 percent of schools are already complying with the final nutrition standards, including the first phase of sodium reduction…Nine out of 10 school-aged children are eating too much salt, which is why reducing sodium levels in school meals is so important. The USDA should be doubling down on helping schools reduce sodium, not slowing down progress, as the Trump administration proposed today.”

Diet is the foundation of health, and it’s fitting that the government making it easier to serve schoolchildren less nutritious lunches is also the administration dismantling the current healthcare system without a viable system to take its place. The USDA considers the school lunch program a part of its nutrition safety net. So why is it making it easier for vulnerable school children to eat poorly?

Nutrition Education and Healthy Choices

Today, one in five children between the ages of 6-19 is obese, and that number has tripled since the 1970s. More than one-third of Americans are obese. The healthcare costs for an obese person are nearly $1,500 higher for an obese person than a normal weight person. Our health nationwide is not improving because we are failing to properly educate kids about healthy food and healthy lifestyle choices. Only one in ten Americans eat enough vegetables. Combine that with a nutrition safety net willing to compromise health standards out of concern with program operators, school nutrition professionals, industry, and other stakeholders. It’s no wonder kids don’t know how important healthy food choices are, let alone how to make them.

USDA Drops Glyphosate Testing Plans, Makes Monsanto’s Life Easier

The U.S. Department of Agriculture is no longer planning to test samples of corn syrup for glyphosate residue. Plans to test for the herbicide were coordinated between the USDA and the Environmental Protection Agency and scheduled to begin in April of this year.

The cancellation of this program is good news for Monsanto. The company is currently embroiled in litigation, with plaintiffs in the case alleging that Roundup caused non-Hodgkin’s lymphoma. The extent of the EPA’s involvement in the lawsuit is not known, although the federal judge presiding over the case has indicated he is likely to subpoena the chair of the EPA’s Cancer Assessment Review Committee. Regardless of the lawsuit, the decision by the USDA to drop scheduled glyphosate testing is disheartening and further erodes their food integrity credibility.

Agencies in Disarray

The USDA’s failure to properly test for glyphosate residue is baffling. The agency’s reasons for not testing for the world’s most used pesticide center around that process being too expensive and inefficient. If that argument sounds familiar, that’s because it echoes Monsanto’s own thoughts on glyphosate tests. The Food and Drug Administration doesn’t necessarily agree. Last year they set in motion a testing program that found glyphosate in every sample of honey tested. Launched in February, it was indefinitely suspended by November.

When Demand Isn’t Enough

Europe and Canada have glyphosate testing programs in place, with the Canadian Food Inspection Agency planning to release their findings in the near future. This is the most used herbicide in the world, with over 250 million pounds of it used in the U.S. every year. Any layperson looking for it has only to walk into the nearest supermarket, restaurant, or convenience store. But we don’t know for sure, although we definitely want to.

The entire motivation behind the FDA’s short-lived was public demand. The American public and the U.S Government Accountability Office both have issues with the current ill-advised and unsustainable system. For a brief, shining period the USDA got it. The taxpayer need and demand for testing didn’t change. So what did?

7 Days of Meatless Meals the Whole Family Can Agree On

I get asked often why I chose to switch to an ovo-vegetarian diet. The ever present questions,“What do you eat?” and “Where do you get your protein?” typically come in a condescending tone paired with a scrunched face of disapproval or disgust. This took me by surprise at first, but after years of the same questions, I have come to laugh at the common misconceptions and use them as a chance to explain the morality of the decision for me, the reality of proteins available, and the array of health benefits.

After the initial seemingly startling news that my home is meatless, the second round of statements are something like, “Oh I could never do that. I love meat too much,” or “I wouldn’t even know where to start.”

I can’t argue with anyone’s choice to eat as they please, but I can help to refute some common misconceptions about a vegetarian diet lacking in both protein and the essential micro-nutrients we all need.  I’ll do that below by giving 7 examples of vegetarian meals that will feed the whole family and are jam packed with the essentials for a healthy, happy, hearty meal.

Before addressing meals, though, I find it necessary to address the common misconception that a vegetarian diet is lacking in protein. A huge contributor to the idea that meat is the primary source of protein is the food pyramid. We are exposed to the food pyramid at a very young age and it continues to be pressed from grade school through high school. It is also pushed heavily by the dairy and meat industries by way of media, television, radio, etc. While watching your evening television show, try counting how many times you see a commercial talking about the food pyramid, meat, or dairy. It will surprise you.

The reality is that through these ideals, two-thirds of Americans are overweight or obese, and childhood obesity has grown exponentially in the last 30 years. Not only have the obesity rates risen, so have diseases like osteoporosis. This is due to the hydrochloric acids needed to digest meat. To neutralize these acids, our bodies use our internal source of calcium. In fact, a study published in the Medical Tribune by Michigan State (found in the book, Diet For New America), showed that female vegetarians averaged 18% bone loss while their meat-eating counterparts averaged 35% bone loss leading to osteoporosis.

What many people don’t realize is that there is protein in many of our other food groups. Foods in the legume family are a great example. Green peas contain 7.9 grams of protein per cup, taste great, and can be used in a variety of different meals. Quinoa is a grain that contains 8 grams of protein per cup. Beans are another huge protein source. Just two cups of kidney beans contain about 30 grams of protein — more than a Big Mac at McDonald’s, which has about 25 grams. Even a cup of chopped broccoli contains 8.1 grams of protein.

These are just a few examples of protein-rich foods that are healthy and taste great. Outside of those factors, our bodies digest a vegetarian/vegan diet faster than one with fat, heavy meats. With a vegetarian/vegan diet, we feel fuller faster, and overeating is less likely to occur.

The USDA nutrition database states that the average vegan male needs 63 grams of protein a day, and the average female, 53 grams per day, a quota easily met when nearly all vegetables, grains, seeds, beans, and nuts contain protein. Now that we have a better understanding of some of the key misconceptions let’s get cooking! Here are 7 meals that are protein heavy, delicious and sure to be a hit with the family.

  1. Broccoli Slaw Stir Fry – 24 grams of protein

Great for a busy night when there isn’t much time to prep dinner. Takes about 15 minutes to prepare and is high in protein, fiber, and vitamin C.

Not only is it a great source of protein, but this meal provides a whopping 60% of your fiber intake as well. A base of butternut squash, quinoa, and kidney beans that can be prepared in just an hour! Great for those winter evenings in or to freeze for lunches.

The FDA Announces They Will Now Test For Glyphosates

Glyphosate, the extra secret ingredient in the majority of our food supply, will now have a harder time going incognito. After the U.S. Government Accountability Office (GAO) published a criticism of the FDA and the USDA’s current herbicide monitoring practices, the FDA, the highest food safety administration in the land, announced they have finally developed a “streamlined method” designed for testing foods like corn and soy for glyphosate, the active ingredient in the world’s most popular herbicide, Roundup.

Roundup use has been on the rise since its introduction in 1974, and the amount of glyphosate residue considered “safe” has ballooned by a factor of 17. The EPA allows fifty times more glyphosate to be sprayed on corn now than they allowed in 1995. Continued claims that Roundup is safe, though it was recently labeled a possible human carcinogen by the World Health Organization, and claims that residue levels are of no concern, though the FDA wasn’t even testing glyphosate residue levels on crops, has further tarnished the reputations of the EPA, the USDA, and the FDA. 

Reasons or Excuses?

It’s kind of crazy that the FDA, the organization tasked with monitoring herbicides, has not been testing for the world’s most used herbicide. It’s like getting an STD test at a clinic and not testing for syphilis. The FDA cites the cost of testing as the reason for excluding glyphosate from their testing. Adding glyphosate testing to six of the FDA’s facilities has an estimated cost of 5 million. Monsanto makes 5 billion dollars a year in revenue from glyphosate while also supplying the FDA with some of the highest ranking individuals working there. Is it too far of a stretch to wonder if neglecting to test for Roundup residue was really an issue of cost?  Or was it an excuse to allow one of the largest corporations to keep selling massive amounts of a substance increasingly recognized as detrimental to human health?

Living in the Now

The study by the WHO that identified glyphosate as “probably carcinogenic” has been a game changer. It’s possible we wouldn’t know about the lack of reliable glyphosate testing without that study, as the GAO report criticizing the FDA’s lax practices was actually released in 2014. While that timeline definitely fits, there are also other factors prompting this announcement from the FDA.

Independent testing companies like Abraxis and MIcrobe have seen an uptick in requests for glyphosate testing after the WHO study was published. Small companies, advocate groups, and doctors are among the customers asking for this information more than ever before. Test requests at some labs have increased from a few a year to a few a week, indicating that food transparency is a rising interest. Test results showed glyphosate residues in a variety of products from honey to soy sauce to infant formula.

Keep the Ball Rolling

Here’s the good news: public pressure can produce results. We still don’t know the extent to which herbicides like glyphosate can affect our health,  but we’ll never know without proper study of all available information. The push for food transparency is on its way to making a big difference in our health and our quality of life.

How the USDA Traded One Disease For Another

In the late 1970s, a senate committee pushed its “Dietary Goals for the United States” urging Americans to eat less fat. It was thought that red meat, eggs, and dairy were killing Americans.

By the 1980s, nearly a million Americans were dying of heart disease each year.

Again, Americans were told to eat less fat and eat more carbohydrates. These recommendations were built into a monument and lauded to the public as the salvation for American health: The Food Pyramid.

The Food Pyramid recommended carbohydrates as the staple of a healthy diet. Fat was a killer, or so we were led to believe, therefore recommendations for fat intake were drastically reduced. A $150 million dollar study, which pushed the same message, came fast on the heels of these recommendations. The study said to eat less fat and avoid foods high in cholesterol in order to reduce your risk of heart disease.

Americans followed this advice and carbohydrate consumption rose. Not produce consumption, we increased consumption of grains and sugar. Americans are now sicker than before. Deaths from heart disease have dropped a bit, but obesity and diabetes is on the rise.

Whole milk has been banned from most of our public schools, but strawberry milk, chocolate milk, and soda machines are usually available. Whole plain yogurt is usually difficult to find in a grocery store, but low fat, sugar filled, artificially flavored, artificially colored options are everywhere. The prevailing belief is that these low fat options are healthier, even when loaded with sweeteners, than whole milk.

Deaths from heart disease have indeed slightly declined, but its close cousin, cardiovascular disease, remains the nation’s number # 1 killer and the leading cause of death for individuals with diabetes. According to Time Magazine, diabetes has increased 166% from 1980 to 2012. The low-fat trend was directed toward lowering cholesterol. Today the high fructose corn syrup found in nearly every processed food is the reason cholesterol remains high.

American Health is on a Downward Trend

In every measurable way, Americans are in worse health than ever before. It is widely predicted that our lifespan is shortening; the generations that came before us will outlive us, and we are likely to outlive the generations who succeed us.

Despite the variety of diets, popular and obscure, safe and dangerous, on average, Americans are fatter than ever before. Most Americans eat slightly less red meat and eat more lean meat, but they eat more sugar and more highly processed and refined foods. The CDC predicts that by 2030 up to 42% of the U.S. population will be obese, and 11% will be severely obese.

Over time, some foods have gone up in demand, while others have fallen in popularity. Sugar consumption from sugar cane has dropped 35% while corn-based sweeteners (mostly high fructose corn syrup) consumption has risen by 8,853%. It’s not that Americans choose to eat corn syrup, they choose to eat processed foods, and high fructose corn syrup is added to nearly every processed food.

The current government guidelines are only a little different than the original food pyramid. The current recommendations are still high in grains, but the recommendation for fruits and vegetables is higher.

Conclusion

A truly healthy diet is a diverse, whole food, plant based diet. A full 80% of your diet should consist of raw, fresh, organic produce – more vegetables than fruits. Meats should be organic. Nuts and seeds should be soaked or sprouted. Grains should be limited and gluten should be avoided if any illness is present. Dairy should be organic and raw or limited. Omega 3 fatty acids from flax seed oil, fish oil, or a blended oil and oily fish should be added to your diet.

You should avoid all artificial flavors, colors, and preservatives; MSG; high fructose corn syrup; and GMOs. Seriously limit or eliminate all processed sugar.
