1 tablespoon yakon syrup
1 lime, juiced
2 red hot chili peppers, halved, seeded, and
finely chopped
2 tablespoons fresh mint, shredded
6 kiwis, peeled and finely chopped
3 avocados, halved, seeds removed
In a bowl, combine agave syrup, lime juice, chili, and mint. Add kiwi, mix, and marinate for 30 minutes. Spoon into the “cups” of the avocado halves.
Alternatively, use as a salad dressing.
2 medium avocados, cubed
3 tablespoons lime juice
2 kiwis, peeled and cubed
1/4 cup red onion, finely chopped
2 tablespoons red pepper
3 tablespoons cilantro, finely chopped
1/4 teaspoons crushed red pepper
1/2 teaspoon sea salt
pepper to taste
Place cubed avocado and lime juice in a bowl. Gently toss. Add cubed kiwis and all other remaining ingredients. Gently toss. Refrigerate until serving.
For those of you who cook, this salsa is delicious on chicken or fish.
