Saffron Poached Pear Recipe
Saffron Poached Pear

All ingredients should be organic whenever possible.
Ingredients (6-8 Portions):
6 Williams or Comice Pears (or your favorite variety)
1 cinnamon stick
1 star anise
6 cardamom pods
6 cloves
1 vanilla pod split and seeded
Large pinch of saffron
3 or 4 tbsp honey/sugar/agave nectar
Method:
- Carefully peel the pears, leaving the stalks on. This not only looks more appealing, it gives you a carrying handle when serving!
- Place all the ingredients in a saucepan that comfortably fits all the pears in one layer.
- Cover with water and slowly bring to a simmer for approximately 10 minutes. Check the pears with a knife. If the blade slides in easily, they are ready. If they are still quite firm, just leave for a further 5-10 minutes and check again.
- When cooked, allow the pears to cool in the liquid.
- Remove the pears and trim the base very slightly to make a flat bottom so they will stand up.
- If using the same day, leave at room temperature. If preparing in advance, cover and refrigerate.
- Reduce the liquid down by roughly half or until it is slightly thick and syrupy. Use the syrup to garnish when serving.
- The pears go really well with chocolate mousse.

Nutrition: As desserts go, this is one of those that takes a basic ingredient and transforms it into something simple but incredibly effective as a dessert, without the need for carbohydrates, dairy, or wheat. With very little sugar and your choice of accompaniment, it can really be anything you want it to be.
