Cooking with Ghee
And ghee is considered an ideal fat to use for cooking by many health advocates.If you read
our fat article in issue 4, you know that one of the main problems with cooking oils is that they break down and turn into trans fats. Olive oil is good to cook with at low temperatures, but coconut oil and ghee are much better choices because they have a high smoke point and will not easily become trans fats. But coconut oil doesn’t always complement the flavor of the food you are cooking. Butter usually does. How Ghee is Made
Ghee, also known as clarified butter. is made by melting and simmering butter until three layers form: a foamy, watery layer that floats on top, which is skimmed off; a solid butter layer[ and a milk solids layer. The solid butter layer is ghee, or clarified butter. The longer the melted butter cooks, the more intense the resulting flavor of the ghee.
