All ingredients should be organic whenever possible.
Ingredients (6-8 Portions):
2 lbs. ground grass-fed beef
1 large clove garlic finely chopped
1 tablespoon finely chopped onion
1/4 teaspoon mustard powder
3 tablespoons Pure Indian Foods grass-fed ghee
salt and pepper to taste
sandwich roll
tomato slices topped with mozarella cheese
lettuce
red onion
condiments of choice (I used homemade buttermilk sauce)
Method:
- I ground my own meat, using a sirloin steak, chuck steak, 2 beef ribs and skirt steak. You should end up with about 6 lbs. (it freezes well after grinding). The mixture of meat is very flavorful.
- Add garlic, onion, mustard powder to ground beef. Handle the beef as little as possible. Drizzle melted ghee over meat and lightly toss to incorporate. Put in freezer.
- Put tomato slices topped with mozarella cheese under broiler til cheese is melted
- Start your grill, preferable charcoal for maximum flavor. When charcoal is ready pull meat from freezer and gently roll into 4 half pound balls. Gently flatten adding a divot to the center.
- Salt and pepper both sides to taste.
- Grill to your doneness preference. NOTE: Grill will flame up and this is great to sear both sides and then cook on indirect heat. Also, turning the meat frequently seems to make them even more juicy.
- Split open roll and drizzle both sides with ghee. Toast in a frying pan, oven or over indirect heat of grill.
